XIULIT FORCALLA. LES FRESES
The pursuit of high yields and resistance to phylloxera led Valencian growers, around 100 years ago, to abandon the native Forcallà grape variety in favor of foreign ones. At our winery, our philosophy is rooted in reconnecting with local grape varieties, restoring their value and dignity. Xiulit is made from 100% Forcallà, grown on calcareous soils.
WINEMAKING AND AGEING
The wine underwent one week of maceration, with 10% whole clusters including stems, and was aged for 9 months in 400-liter vitrified amphorae. Only two rackings were carried out, with no filtration prior to bottling. Alcoholic fermentation took place in stainless steel tanks, while ageing and malolactic fermentation occurred in 400-liter vitrified amphorae, buried in albero soil, ensuring a complete absence of oxygen throughout the maturation process.
Taste: Bright golden color. On the nose, a powerful aroma with notes of citrus, pastry, toasted almonds, roses. In the mouth tasty, spicy, fruity, bitter oranges. Good acidity/sugar balance. Very pleasant for its freshness. The retronasal is of long aromatic persistence.
TASTING NOTES
A grape variety light in alcohol and color, reminiscent of Gamay. Aromas of sour cherry and blood orange stand out.
On the palate, it is very creamy, fresh and pleasurable, with lactic notes and red fruit flavors.
