In the Kingdom of the Mountain
We are not a restaurant, we are a house of dining in the kingdom of the mountain. We are not in a remote place, but away from the worldly noise. The last kilometers to get here are a slow journey, along winding roads and endless landscapes. Olive groves, almond trees, cherry orchards, orange trees, mandarin trees, cork oaks. Take it slow, there is no rush


FAMILY CUISINE
The most sincere love, homemade cuisine from the countryside, respect for the territory we inhabit, a comforting soup dish in the winter, appreciation for tradition and local producers, the pleasant fleetingness of summer vegetables, the Mediterranean Sea, the mountain, and the Valencian orchard. When we opened our doors, around 2017, we wanted to return to our roots, to value the idiosyncrasy of the La Marina Alta region and its people by telling their stories through cuisine.

LA VALL
DE LAGUAR
In the Kingdom of the Mountain
Our Mediterranean valley, La Vall de Laguar, is located in the interior of the province of Alicante, between two mountain ranges, with views of Montgó and the Mediterranean Sea. On one side, the Barranc del Infern, where the Girona River separates the Serra de la Carrasca, also known as Serra d’Ebo, from the Serra del Migdia, and traverses the entire valley until it reaches the Isbert Reservoir. On the other side, the Serra del Cavall Verd, which gives our restaurant its name, also known as Sierra del Penyó. From this trench, we are guardians of the territory, rural knowledge, time, family, and the passage of days.

LOCAL PRODUCTS
We enjoy interpreting the uniqueness of the product in its season, respecting the rhythms of nature. Everything in its time. But we also make preserves, pickles, sausages, and marinated products. We like to have a pantry like our ancestors, to make a pantry.
