Harvest in mid-September when the bunch has half of the grapes pansified, soft de-stemming, native yeasts, slow alcoholic fermentation of 60 days, stop of fermentation due to its sugar content.
BREEDING
12 months in American, French, Hungarian and Caucasian oak barrels of 225 liters with regular batonnage.
Made with 100% Muscat of Alexandria and aged for 13 months in French, American and Hungarian oak barrels. It has notes of honey, rose water and orange peel. After them appears an exotic and dark background of toasted almonds and sweet spices, vanilla as the main protagonist.
Casta Diva, the delicate and sensual aria from the opera “Norma” by Bellini, served as inspiration for Felipe Gutiérrez de la Vega to name this expressive sweet wine.
Taste: Bright golden color. On the nose, a powerful aroma with notes of citrus, pastry, toasted almonds, roses. In the mouth tasty, spicy, fruity, bitter oranges. Good acidity/sugar balance. Very pleasant for its freshness. The retronasal is of long aromatic persistence.
