Evarist Miralles

Father and host, chef, teacher, and communicator, Evarist Miralles is a wanderer who, after several professional adventures, wanted to return to his roots to dedicate time to his family, to listen to the elders’ stories, and to savor village life. He likes to welcome and cater to his diners, making them happy. With over three decades of experience, his passion and dedication are reflected in his heartfelt and approachable cuisine, which draws from traditional and regional recipes, bridging ancient classical cooking with modern, academically and French-influenced cuisine while staying true to the territory he inhabits.

In 2011, he was the “XIII Spanish Chef Champion,” a title that allowed him to represent our country in the Bocuse D’Or, declared the best culinary competition in the world, also known as the Culinary Olympics. Currently, he combines teaching in the network of Culinary Schools (CdT’s) of the Valencian Community with managing as owner and head chef of Nou Cavall Verd, in La Vall de Laguar, where he embraces both seasonal products and those who sit at his table.

Vicen Sendra

Mother and hostess, two years ago she decided to take charge of the Nou Cavall Verd restaurant, which she runs with heart and a smile. She has always been by Evarist’s side, putting a stop to his antics, with family as a joint priority. Her training is a Graduate in Social Work from the University of Alicante and a Senior Technician in Environmental Health, she has worked with minors and people at risk of social exclusion. She is currently continuing her training in hospitality to be able to apply her extensive knowledge in day-to-day life, in restaurant management or in dealing with customers. Her innate sensitivity and empathy perfectly complement Evarist’s experience and dedication.
