LA VALL

Our Mediterranean valley, La Vall de Laguar, is located in the interior of the province of Alicante, between two mountain ranges, with views of Montgó and the Mediterranean Sea. On one side, the Barranc del Infern, where the Girona River separates the Serra de la Carrasca, also known as Serra d’Ebo, from the Serra del Migdia, and traverses the entire valley until it reaches the Isbert Reservoir. On the other side, the Serra del Cavall Verd, which gives our restaurant its name, also known as Sierra del Penyó. From this trench, we are guardians of the territory, rural knowledge, time, family, and the passage of days.

Trails and Legends

The Barranc de l’Infern, known as “the cathedral of hiking,” with its 6,500 Moorish-origin steps and its 14.5 km of rugged landscape; the descent to Toll Blau, the Cova del Tamborí, or the route through the springs of La Vall de Laguar are just some of the trails you will find minutes away from Nou Cavall Verd. Trails and legends that help us understand our history through the centuries and our unique orography.

FONTILLES

The imposing wall of over 3 kilometers that towers from the road belongs to this ancient sanatorium dating back to 1909. For more than a century, Fontilles housed over 3,000 people with leprosy and was essential in eradicating this disease in Spain. Today, it is a reference socio-health center for leprosy training and research, as well as a foundation focused on the health of the most vulnerable people, such as the highly dependent or those with chronic illnesses.

 

MONTGÓ

The views from Nou Cavall Verd cannot be described without mentioning Montgó, a protected natural park located between Xàbia and Dénia. With over 650 species of flora and 150 species of vertebrates, this mountain massif is composed of Cretaceous materials, abundant marls, and limestones. When you visit, you will be surprised by its prehistoric caves, agricultural colonies, or the remains of Iberian settlements and Arab sites.

SEGÀRIA

From our final destinations you can see this spectacular 94,000 m² Baetic Muntanyenca alignment, which is from north-west to south-west and includes beautiful paratges, coves, avenues, cims and fountains. At the bottom there is a third-order geodesic vertex of 506 m above sea level. It would be of great botanical interest because it is home to the greatest concentration of protected, endemic, rare or threatened flora in the region.

IBIZA

On clear days, with good visibility, we can contemplate from La Vall de Laguar the island of Ibiza, emerging on the horizon as a Mediterranean and Balearic territory.
