We only cook what the land provides each season, through local farmers or our own garden, and what the fishermen catch daily, which we buy directly from nearby fish markets. Our sourdough bread, and everything that accompanies it, is a declaration of intentions. This is our warm welcome, an eternal ritual that is our hallmark of identity, our first gastronomic liturgy as a prelude to everything that will come after. The oils we serve, made by Dianic producers from the territory, who share our values.

Our philosophy is based on respect and the use of raw materials and local and seasonal products, lifelong recipes, traditional cuisine, and popular knowledge. Pericana, shepherd’s raiment, extra virgin olive oil from our olive trees, sourdough bread. The table is set.
