THE MENU

The seasonal product shapes our gastronomic proposal: depending on the time of year you come, you will find different flavors in the dish. We only cook what the land provides each season, through local farmers or our own garden, and what the fishermen catch daily, which we buy directly from nearby fish markets. Mediterranean wines, local wines, wines that discover territories yet to be explored. Because we want you to get to know our surroundings and maybe something new each time you visit Nou Cavall Verd, but also to travel from your glass. To toast, share, celebrate.

BREAD AND OIL

Our sourdough bread, and everything that accompanies it, is a declaration of intentions. This is our warm welcome, an eternal ritual that is our hallmark of identity, our first gastronomic liturgy as a prelude to everything that will come after. The oils we serve, made by Dianic producers from the territory, who share our values.

FROM THE EARTH

Our philosophy is based on respect and the use of raw materials and local and seasonal products, lifelong recipes, traditional cuisine, and popular knowledge. Pericana, shepherd’s raiment, extra virgin olive oil from our olive trees, sourdough bread. The table is set.
